The BEST Summer Grilling Marinades & Sauces

Grilling and summer go hand in hand.  Here are a few sauces and marinades that you can prep a day or two in advance.  Here’s one for every protein!

BEEF CHiMiCHURRi SAUCE.  This classic Argentinian-based parsley based sauce is so fresh and delicious.  It pairs best with beef and sausages, but also works well with pork, shrimp, or chicken.  It can be used as a marinade, side sauce, or both!

  • 1/2 cup vegetable oil
  • 1/2 cup extra-virgin olive oil
  • 2 tablespoons white wine vinegar
  • 1/2 cup chopped parsley
  • 1/2 cup chopped cilantro
  • Jarred roasted red bell peppers chopped
  • 4 garlic cloves, minced
  • 2 tablespoons minced onion
  • 1 tablespoon fresh lime juice
  • 2 teaspoons crushed red pepper
  • Salt and freshly ground pepper
  • Ten 10-ounce strip steaks, cut 3/4 inch thick
  • 2 tablespoons unsalted butter, melted
  • Smoked sea salt

the ONLY CHiCKEN MARiNADE you’ll EVER NEED!  Pour marinade over the chicken in the zip top bag. Remove as much air as possible from the bag and seal. Turn the bag from side to side to make sure all chicken has been coated with the marinade.

  • 1/2 cup olive oil
  • 1 teaspoon sea salt
  • 1/2 teaspoon ground black pepper
  • 1/2 teaspoon paprika
  • 1/2 teaspoon cumin
  • 1/4 teaspoon cayenne pepper
  • 2 cloves garlic chopped
  • 3 tablespoons chopped onion
  • 1/2 cup chopped fresh parsley
  • 1 1/2 cups beer

PERFECT PORK MARiNADE.  This is just as the title suggests: perfect on any cut of pork.  The soy sauce tenderizes the cut, and the sugar lends some caramelizing properties.  Let the pork sit in a plastic bag with the marinade for at least 2 hours.

  • 1/3 cup  soy sauce 
  • 2 tbsp brown sugar
  • 2 tsp Worcestershire sauce
  • 1 tsp Dijon mustard
  • 2 garlic cloves , minced
  • ¼ tsp black pepper

GRiLLED FiSH MARiNADE.  This 20 minute marinade (save some to top the fish) works literally with ANY type of fish.

  • 1/2 cup plain, nonfat Greek yogurt
  • 1 tablespoon olive oil
  • 1/2 small white onion, finely grated
  • 2 cloves garlic, crushed
  • 1 teaspoon sweet paprika
  • 1/2 teaspoon each: salt, turmeric, ground cumin
  • 1/4 teaspoon cayenne
