Chili is the IDEAL meal to enjoy on Halloween. Start a pot in the late afternoon, and let it simmer while the doorbell starts to ring. Invite some friends and neighbors over to enjoy with you. In between greeting your ghoulish trick-or-treaters, the chili will stay warm.
Set up a chili bar, including offerings of sour cream, shredded cheddar cheese, diced raw onions, sliced scallions, sliced jalapeno, sprigs of cilantro, and corn chips.
This recipe adds some seasonal interest as well as some extra nutrition with the inclusion of pumpkin. The beer adds an amazing depth of flavor.
And note – chili always calls for a cold, hearty beer in hand.
3 pounds lean ground beef
3 cloves garlic, minced
1 medium onion, chopped
1 tablespoon cumin
1 tablespoon dried oregano
1 teaspoon cocoa powder
1/4 teaspoon allspice
1-8 oz can tomato paste
1 bottle of dark beer
1-15 oz can pure pumpkin puree
2- 15 oz can diced tomatoes
1- 15 oz can black beans, drained and thoroughly rinsed
1- 15 oz can cannellini beans, drained and thoroughly rinsed
1- 15 oz can of kidney beans, drained and thoroughly rinsed
Add the ground beef to a dutch oven or large stock pot and adjust heat to medium-high. Break up the meat using a wooden spoon, and add the garlic and onion and cook until meat is browned. Add all other ingredients except for the beans. Stir and bring to a boil. Reduce heat, cover, and let simmer for 1 1/2- 2 hours. Stir in beans, and allow to simmer for 15 minutes longer. Serves 6.
